Ingredients:
200 gr. of Amaretti Cookies
A little quantity of Cinnamon
300 gr. of Dark Chocolate
5 Aubergines
50 gr. of Pine Nuts
500 gr. of Ricotta Cheese
1 Egg
1 Vanillin Sachet
300 gr. of Sugar
DIRECTIONS:
Wash firstly the aubergines cutting them and putting them in boiling water pouring in it the sugar. Once they are cooked (that is to say when they surface) dry them letting them cool down. After that, you should deprive the aubergines from their pulp that you will keep apart for the filling.
Now mix in a terrine the aubergines pulp, the crumbled amaretti cookies, the ricotta, the pine nuts, the egg, the vanillin and the cinnamon.
Amalgamate everything together and stuff with this mixture the aubergines that you have previously depleted. Cook the stuffed aubergines in the oven at 180° for 20 minutes and, in the meanwhile, melt the chocolate in a bain-marie.
Once you take the aubergines from the oven cover them immediately with the melted chocolate.
Let them cool down and put them in the fridge for 30 minutes and then serve them cool.
If you want to decorate this dish you can put on the aubergines some white chocolate chips or some crumbled amaretti cookies.
