Ingredients:

1 onion
Basil
50 gr of capers in salt from Pantelleria
4 small courgettes
4 ripe tomatoes
A pinch of oregano
Salt
Pepper
4 tablespoons of extra virgin olive oil
50 gr of matured cheese
4 eggs

Preparation:

Grease a pan with oil, add the chopped onion and put on the fire.

Add the tomatoes cut into pieces and seedless, courgettes cut into small cubes and cook over low heat, stirring occasionally.

When the courgettes are almost cooked add the cheese cut into small cubes and eggs.

Finish cooking and serve.
