The Sfinci of  St. Joseph are typical sweets that you eat in Sicily for the feast of St. Joseph, one of the oldest and traditional celebrations of southern Italy, linked to Father’s Day. The name derives from the Latin “spongia” namely sponge, indeed they’re soft, tasty and asymmetric cakes which seem real sponges.

Ingredients:

400 gr of flour
50 gr of lard
10 eggs
1 teaspoon of bicarbonate of soda
1/2 liter of water
Vegetable oil
1 pinch of salt

Preparation:

Heat the water with salt, melt the lard and add the flour, working vigorously to prevent the formation of any lumps. Add the eggs one at a time and knead the dough until you obtain a smooth and well blended mixture. Let stand for about 15 minutes, taking care however it doesn’t yeast.

After the indicated time, put to heat the vegetable oil in a frying pan from the edge up. With a spoon, take a nut of dough and dip it in the boiling oil; turn it continuously, let it brown and then put on a sheet of absorbent paper. Proceed this way until the exhaustion of the dough.

At the end, fill the fritters with a pastry syringe. You can use the classic ricotta cheese cream, or chocolate or pastry cream.
