‘O sammurigghiu, in dialect, is an ancient Sicilian sauce that is used to accompany grilled meat and fish. This sauce consists of lemon that must be emulsified with oil, parsley, fresh garlic and oregano. On Lipari Islands wine is used instead of lemon.
It is a seasoning that is not particularly difficult but warrants applauses for the cook!

Ingredients for 4 people:

800 gr of swordfish slices
Extra-virgin olive oil
1 lemon
Oregano
Parsley
Garlic
Salt
Pepper

Preparation:

Cook the swordfish on the grill (preferably over charcoal).

Once cooked, season with the sauce (sammurigghiu) that you obtain beating oil, filtered lemon juice, salt, pepper, oregano, parsley and chopped garlic .
