Ingredients:
200 gr of potatoes
200 gr of  flour
20 gr of  yeast
1 egg
150 gr of  butter
60 gr of  sugar
Salt
Warm milk

Panzerotti with fruit jam

Cook the potatoes with the peel in water and peel them while they’re still hot, then pass them with the potato masher.
Add flour, the yeast diluted with the warm milk, an egg, melted butter, sugar and a pinch of salt. Mix all, form a ball, put it in a bowl and cover with a napkin. Let rise for one hour in warm place.

Roll out with rolling pin and divide into small squares. At the center of each one put half a tablespoon of fruit jam and fold with the form of a half moon.

Put them not too close on a buttered and floured baking tray and allow to rise for about 30 minutes. Brush the surface with beaten yolk egg together with a tablespoon of cold milk. Bake at 180-200 degrees.
